Preheat oven to 400˚
Line a rimmed baking sheet with parchment paper
Drizzle 1 tbsp of olive oil on paper and spread around with your fingers
Place salmon pieces on the oiled area
Drizzle salmon with remaining olive oil
Spoon grainy Dijon on each piece, covering top and sides
Sprinkle heartily with fresh dill
Sprinkle with salt and pepper
Place one pat of ghee on each piece of salmon
Place the halved lemons cut side down on the pan
Bake 20 minutes
Remove from oven and with tongs, squeeze lemon juice over salmon
Garnish with extra fresh dill if desired
