This Mustard Dill Salmon is as easy as it is beautiful!  It takes less than 30 minutes start to table for the most mouthwatering salmon ever.  The grainy mustard is the key here and I love Noble Made coarse-Dijon.   Lots of fresh dill, lemon juice and ghee.  I served it over a simple cauliflower rice mixed with fresh spinach, garlic and ghee for the perfect side dish.  My husband is not a salmon fan and wanted to know when I was going to make this again.  Thats a huge win for me!!

Ingredients
  

  • 4 pieces Salmon Filet Wild Caught, 6 ounces each
  • 3 Tbsp Extra Virgin Olive Oil
  • 1/2 cup Coarse-Dijon Mustard Noble Made
  • 1/4 cup Dill Weed chopped
  • 1 tsp Kosher Flake Salt
  • 1 tsp Black Pepper
  • 1 Lemon cut in half
  • 4 Tbsp Ghee cut in pats, I like Fourth & Heart Stick Ghee

Method
 

  1. Preheat oven to 400˚
  2. Line a rimmed baking sheet with parchment paper
  3. Drizzle 1 tbsp of olive oil on paper and spread around with your fingers
  4. Place salmon pieces on the oiled area
  5. Drizzle salmon with remaining olive oil
  6. Spoon grainy Dijon on each piece, covering top and sides
  7. Sprinkle heartily with fresh dill
  8. Sprinkle with salt and pepper
  9. Place one pat of ghee on each piece of salmon
  10. Place the halved lemons cut side down on the pan
  11. Bake 20 minutes
  12. Remove from oven and with tongs, squeeze lemon juice over salmon
  13. Garnish with extra fresh dill if desired
  14. Enjoy!
