Fajita's are such an easy meal to prepare! Whether you are having steak, chicken or these Sheet Pan Shrimp Fajita's they are sure to please! This flavorful dish is ready in 30 minutes and has minimal prep time! I love serving it in bowls with all the classic fajita toppings like fresh guacamole, sour cream, cilantro and limes. You can also serve it over it over cauliflower rice. The whole family will love this easy sheet pan dinner!

Ingredients
  

  • 1 lb Raw Shrimp deveined and tails off, pat dry
  • 3 Bell Pepper seeded & sliced thinly
  • 1 Onion large, sliced in 1/4" wedges
  • 1/4 cup Avocado Oil plus extra drizzle for shrimp
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Fajita Spice
  • 2 Limes 1 juiced, 1 cut in wedges for serving
  • 1/4 cup Cilantro chopped

Method
 

  1. Preheat oven to 400˚
  2. Line a rimmed pan with parchment paper
  3. Spread peppers and onions evenly on pan
  4. Drizzle with 1/4 cup oil
  5. Sprinkle with salt and pepper
  6. Squeeze juice from one lime over peppers and onions
  7. Cook for 15 minutes
  8. Meanwhile, toss shrimp in fajita spice and drizzle with oil, toss again
  9. Remove pan from oven and add shrimp to pan
  10. Cook 15 minutes longer, flipping shrimp halfway through
  11. Garnish with lime wedges and cilantro
  12. Enjoy!
