Smoky Chipotle Chili

Ready to warm your soul because this Smoky Chipotle Chili will do just that!  It is so hearty and so delicious and I promise you won’t miss the beans because the sweet potato bites fill in and add a touch of sweetness to the smoky flavor of this chili.  This hearty bowl is great way to get in veggies, lots of protein and immunity boosting bone broth too.

Ingredients
  

  • 2 lb Ground Beef I like Grass Roots Coop
  • 1 cup Onion diced
  • 2 Bell Pepper seeded and diced, I used yellow and green but any color works well
  • 2 cups Diced Tomatoes I used fresh but you can used canned
  • 4 oz Green Chilies
  • 16 7/8 oz Chipotle Beef Bone Broth I like Kettle & Fire, see note
  • 1 1/2 cups Sweet Potato peeled and diced
  • 1/4 cup Tomato Paste
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 tsp Garlic Powder
  • 2 tsp Smoked Paprika must be smoked to add that smoky goodness
  • 2 tsp Ground Cumin
  • 2 tsp Chili Powder
  • 1/4 cup Cilantro fresh, chopped
  • 1 Lime 1/2 juiced into pot and half sliced for garnish
  • 1 Avocado sliced for garnish

Method
 

  1. Add ground beef and onions to a large pot, breaking apart beef and cooking till no longer pink
  2. Add sweet potatoes, peppers, tomatoes, green chilis , tomato paste and broth, stirring well
  3. Simmer on medium low for 15 minutes
  4. Add all of the spice and fresh cilantro, simmer another 10 minutes
  5. Serve and garnish with lime slices and avocado
  6. Enjoy!
