Onion: I prefer yellow onion for this recipe as it has a bolder flavor than sweet onions but you can certainly use sweet if you prefer.
Bell pepper: These peppers bring a touch of sweetness as they soften from the cooking process.
Diced tomatoes: Tomatoes are a significant source of umami flavor. Consumed raw or cooked and an especially delicious addition to chili bringing a sweet and juicy flavor.
Green chili pepper: Green chili peppers are known as Hatch or Anaheim chilis and are a nice option when you aren't looking for a super spicy pepper. They are not as hot as jalapeño peppers.
Beef bone broth: I'm a huge fan of adding bone broth over regular broth whenever I can to get all the nutritional benefits it provides. You can absolutely use regular broth instead. For this recipe I used Chipotle beef bone broth available from Kettle and Fire.

Instructions
Cook the beef: Add ground beef and onions to a large pot, breaking apart beef and cooking till no longer pink
To the pot add: Add sweet potatoes, peppers, tomatoes, green chilis , tomato paste and broth, stirring well
Cook the chili: Simmer on medium low for 15 minutes
Add the spice: Add all of the spice and fresh cilantro, simmer another 10 minutes
Garnish: Serve and garnish with lime slices and avocado

- 2 Bell Pepper seeded and diced, I used yellow and green but any color works well
- 2 cups Diced Tomatoes I used fresh but you can used canned
- 4 oz Green Chilies
- 16 ⅞ oz Chipotle Beef Bone Broth I like Kettle & Fire, see note
- 1 ½ cups Sweet Potato peeled and diced
- ¼ cup Tomato Paste
- 2 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 teaspoon Garlic Powder
- 2 teaspoon Smoked Paprika must be smoked to add that smoky goodness
- 2 teaspoon Ground Cumin
- 2 teaspoon Chili Powder
- ¼ cup Cilantro fresh, chopped
- 1 Lime ½ juiced into pot and half sliced for garnish
- 1 Avocado sliced for garnish
