Taco cauliflower with avocado lime crema is a vibrant, healthy, and flavorful vegetarian dish featuring roasted cauliflower florets seasoned with smoky spices. Taco Tuesday will never be the same!

Ingredients
  

  • 1 head Cauliflower leaves removed and enough core so head sits flat
  • Avocado Oil Spray
  • 2 whole Lime one juiced and one for serving
  • 1 Tbsp Chili powder
  • 1 Tbsp Cumin ground
  • 1 tsp Salt
  • 1/4 cup Cilantro fresh, chopped
  • Crema Ingredients:
  • 1/4 cup Avocado oil mayonnaise
  • 1/4 cup Sour Cream Alternative
  • 1 whole Avocado large
  • 1 whole Lime juiced
  • 1/4 cup Cilantro fresh, chopped
  • 1 clove Garlic
  • Salt and Pepper to taste

Method
 

  1. Preheat oven to 425˚ and line a baking sheet with parchment paper.
  2. Prepare the cauliflower by removing the large outer leaves and cutting off enough core so the head sits flat.
  3. Combine the spices and sprinkle over entire head.
  4. Squeeze juice of 1 lime all over head.
  5. Roast for one hour or till tender when pierced with a knife.
  6. Meanwhile make the avocado lime crema by combining the avocado, mayonnaise, sour cream, juice of one lime, cilantro, garlic, salt and pepper in a high speed blender till smooth and creamy.
  7. Serve cauliflower with crema, sliced limes and and garnish with freshly chopped cilantro.
  8. Enjoy!
