    Beetroot Salad with Apples and Walnuts

    This is a recipe I have been making forever.  Being a beetroot lover I am always looking for different ways to enjoy it.  This salad has such an sweet earthy flavor from the beets and added crunch from the apples and walnuts.  To make it even easier, I use store bought beets that are ready to eat out of the package!  If you love beets this is a must try! You might also enjoy this salad.

    Ingredients You Will Need

    Beetroot: Beetroot is a sweet, earthy, colorful root vegetable with a taproot.

    Pink Lady apple: This is my favorite apple! I love the sweet-tart crisp bite it has that adds a refreshing burst of flavor to this salad. It is also my apple of choice as it is slow to oxidize (turn brown) making it the perfect choice for this make ahead salad.

    Celery: CeIery is a nutrient rich, low calorie food that has fiber and vitamin K, small amounts of A and C, calcium and iron. When eaten raw it provides a nice crunchy texture to a salad.

    Lime: Using lime juice in this salad adds a tangy citrus flavor that enhances the dish's overall taste and freshness.

    Walnuts: Walnuts are a great source of omega-3 fatty acids, fiber and antioxidants that can help lower heart disease and boost your brain function. Not only healthy but another added crunch for this salad.

    Red onion: Red onion adds a crunchy texture and bold flavor, elevating salads with its zesty kick.

    Dill weed: I prefer fresh dill for its herbaceous, herby, light and refreshing flavors. It is slightly sweet with elements of parsley, celery and anise.

    Avocado oil mayonnaise: This mayo is made from avocado oil, unlike many common mayos crafted with other oils and offers a unique creamy texture and a healthier fat profile.

    Salt and pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat, improving the overall flavor of a dish.

    Instructions

    Combine the main ingredients: In a large bowl add beets, apples, celery, walnuts and onion and toss well.

    Make the dressing: In a small bowl whisk together mayo, dill, salt, pepper and lime juice.

    Dress the salad: Add mayo mixture to beet mixture and mix well.

    Enjoy!

    Recipe Tips and Tricks

    Beets: I use pre-packaged cooked beets like Love Beets for this salad.

    Apples: I always cut the apples last to keep them looking fresh and bright. Especially if you are using an apple that tends to brown faster after cutting up.

    Recipe Variations

    Granny Smith apples: Can't find Pink Lady apples? Feel free to swap Granny Smith apples.

    Pecans: If you do not care for walnuts, pecans make a perfect alternate in this salad.

    Storage Tips

    To store the Beetroot Salad with Apples and Walnuts, place it in an airtight container and refrigerate up to 5 days.

    Ingredients
      

    • 1 ½ lb Beetroot cut in bite size pieces, I like Love Beets, prepackaged
    • 2 Pink Lady Apple cored and diced
    • 2 pieces Celery sliced thinly
    • 1 Lime large, juiced
    • 1 cup Organic Walnuts chopped
    • ¼ cup Red Onion diced
    • ¼ cup Dill Weed chopped
    • ½ cup Avocado Oil Mayonnaise I like Chosen Foods
    • 1 teaspoon Salt
    • ½ teaspoon Black Pepper

    Instructions
     

    • In a large bowl add beets, apples, celery, walnuts and onion and toss well.

      This beetroot salad is amazing. It has been 90+ degrees here the past 3 days. This salad is so easy to put together and the taste is just amazing. It’s crunchy and creamy and just so delicious. This will definitely be on summer repeat for us.
