    Salsa Verde Soup

    How many times have you made pork shoulder or roast and have wound up with a ton of shredded pork leftover?  I know I have and that is what inspired this amazing Salsa Verde Soup, Pork & Tomatillo Salsa Soup!  Having only five ingredients and ready in no time it has so much flavor and is simply a delicious and cozy bowl full of soup that the whole family will love!     Why You'll Love This Recipe

    It uses leftovers and only has five ingredients making this a super easy soup and it is bursting with flavor. The Salsa Verde Soup is incredibly tasty.

    Ingredients You Will Need

    Pork Shoulder: Is a cut of meat from the pig's shoulder just above the front legs.

    Sweet Potato: are a root vegetable belonging to the morning glory family. They can be quite large and have a starchy, sweet-tasting flesh.

    Fire-Roasted Diced Tomatoes: are charred over an open flame and add a smoky flavor to the dish. They can be purchased canned and are ready to use making it super easy and quick.

    Tomatillo Salsa: is a Mexican sauce or condiment made with tomatillos which are often confused with green tomatoes. I like Trader Joe's Roasted Tomatillo Salsa.

    Chicken Bone Broth or chicken broth: you have the option of using either chicken bone broth or regular chicken broth; the bone broth offers enhanced health benefits along with a richer flavor profile. I like Kettle and Fire and you can use Pennysprimal to get 20% off.

    Instructions

    Place sweet potatoes: in a large pot.

    Pour broth over: and bring to a boil.

    Lower heat: and simmer on a low boil for 10 minutes.

    Carefully add pork: to the pot.

    Now add diced tomatoes: to the pot.

    Add the tomatillo salsa: to the pot.

    Simmer: for 15 minutes for a delicious Salsa Verde Soup.

    Recipe Tips and Tricks

    Make extra pork shoulder: when you are slow cooking for another meal I always buy a larger cut of meat to have plenty left over for this soup. This makes preparing Salsa Verde Soup easier.

    If you like a spicier soup: add some diced jalapeño to the pot.

    Recipe Variations

    Salsa: can be used in place of the tomatillo salsa to make your Salsa Verde Soup unique.

    Pork roast: also works in this soup.

    Storage Tips

    You can store this Salsa Verde Soup in the refrigerator for up to 5 days in a glass ball jar. This soup also freezes well for up to six months.

    Ingredients
      

    • 4 cups Pork Shoulder or pork roast or butt - see notes
    • 4 cups Sweet Potato diced
    • 14 ½ oz Fire-Roasted Muir Glen brand Diced Tomatoes
    • 12 oz Tomatillo Salsa click for recipe, I like Trader Joe's Roasted Tomatillo Salsa
    • 32 oz Chicken Bone Broth or chicken broth - see notes
    Get Recipe Ingredients

    Instructions
     

    • Place sweet potatoes in a large pot
    • Pour broth over and bring to a boil
    • Lower heat and simmer on a low boil for 10 minutes
    • Add pork to pot
    • Add diced tomatoes to pot
    • Add salsa to pot
    • Simmer for 15 minutes
    • Enjoy!

    Notes

    Pork shoulder should be pre cooked and shredded
    I used Kettle & Fire Bone Broth and each box is 16.9 oz so it is a little extra broth which is fine
