    There is just something so cozy about a potato dish. Kicking it up a notch by making this delicious Potato and Onion Casserole that is creamy and has all the best flavors! Topped with a crunchy coating of Italian Nut Crumbs to add the ultimate texture! The potatoes and onions are held together with a flavorful egg mixture and honestly makes the best breakfast side dish. Love an easy casserole?     Ingredients You Will Need

    White Potatoes: are a starchy root vegetable. They have a very white or tan skin and a medium starch with a slightly creamy texture. The skin is very delicate and perfect for this casserole.

    Vidalia Onion: are a sweet onion with a mild flavor and higher sugar content. They are perfect for when you don't want the bold pungent flavor of a yellow onion to stand out in a recipe.

    Eggs: Eggs are a good source of protein and vitamins and are one of the few foods that should be classified as "superfoods". They help bind the Potato and Onion Casserole together nicely.

    Ghee: Incorporating ghee into this sauce adds a rich, nutty flavor. Ghee is clarified - meaning impurities have been removed, resulting in a pure and clear form of butterfat with lower lactose content than butter. I really like Fourth and Heart Ghee and you can use pennysprimal15 to save 15%.

    Nutritional Yeast: Different from regular yeast, nutritional yeast adds a cheesy flavor to dishes without the need for dairy, making it a popular choice in vegan or dairy-free recipes.

    Instructions

    Melt ghee: in a large skillet to start the Potato and Onion Casserole.

    Add potatoes: and onions and cook till potatoes are soft and onions are translucent. Be careful not to brown the onions as you want them to remain sweet and not caramelize.

    Preheat oven: to 350˚.

    Allow potato and onions: to cool for about 10 minutes, do not skip this step to ensure a perfect casserole.

    While cooling: whisk eggs in a bowl and stir in nutritional yeast, salt, pepper and parsley. The mixture will perfectly complement the flavors of your Potato and Onion Casserole.

    Spray your casserole dish: well with avocado oil being sure to get the sides too.

    Pour: potato mixture into casserole dish.

    Now add: the egg mixture over top of the potatoes and onions.

    Mix: nut crumbs with paprika and sprinkle over top of casserole. This will give your Potato and Onion Casserole a delightful crunch.

    Spray: again with avocado oil.

    Bake: 30 minutes or until knife inserted in center comes out clean.

    Ingredients
      

    • 4 Vidalia Onion sliced thinly
    • 4 White Potatoes medium to large, sliced thin and in half moons
    • 6 Eggs
    • 4 tablespoon Ghee
    • ½ cup Nutritional Yeast
    • ½ cup Flat Leaf Parsley chopped
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper
    • 1 teaspoon Paprika
    • ½ cup Italian Nut Crumbs I like Nut Crumbs
    • 1 Avocado Oil Spray
