This Whole30 Sausage Meatball and Potato Soup is dairy-free with savory mini sausage meatballs, earthy mushrooms, sweet carrots, pillowy soft baby potatoes, and bright kale all in a seasoned creamy broth. A delicious, hearty, and veggie-packed soup the whole family will love. Ingredients You Will Need

Ground Pork Sausage: that has been seasoned with fennel or anise as the main seasoning. It is available as mild, sweet or hot with the difference being the amount of hot red pepper flakes being added whereas sweet and mild generally have sweet basil added.

Carrots: are root vegetables that are perfect for cooking or roasting and have a natural sweetness and robust flavor.

Baby Whole Potatoes: are a starchy root vegetable that are small, bite sized potatoes that have a more concentrated flavor making them ideal for soups, salads, baked, roasted or pan fried.

Mushrooms: impart a mild yet earthy flavor to a dish.

Kale: is a leafy green vegetable that is a member of the cabbage family.

Onion: an all-purpose onion most commonly used in cooking and has a strong flavor that mellows into a deep sweetness when cooked, caramelized, or roasted.

Celery: is a nutrient rich, low calorie food and adds a delightful crunch to this salad.

Garlic: adds a savory note that enhances the dish with its bold and aromatic flavor.

Chicken Broth: made primarily from meat and vegetables; it is thinner, lighter, and ready to season or eat on its own.

Ghee: adds a rich, nutty flavor. I love Fourth and Heart ghee.

Coconut Cream: is ideal for dairy-free dishes, providing a creamy texture with a taste that is very mild and usually hidden by other flavors.

Thyme: is a pungent herb that can withstand longer cooking times in stews and soups and adds a depth of flavor.

Rosemary: is an evergreen shrub and is used in cooking for its earthy, woodsy flavor having hints of pepper, lemon and mint.

Salt and Black Pepper: salt enhances and balances flavors. Meanwhile, ground black pepper adds a gentle heat.

Instructions

Roll the ground sausage: into bite sized mini meatballs, set aside.

Melt the ghee: in a large soup pot.

Add the diced onion: and diced celery cooking till the onion is translucent.

Add the minced garlic: stirring for one minute.

Gently place the meatballs into the pot: and don’t touch for 3 minutes. Flip them over and cook 5 minutes more.

Now add the potatoes: carrots, mushrooms, chicken broth and spice. If you need to add a little extra broth to cover the veggies, do so now.

Bring to a boil: lower heat and simmer 10 minutes or till the carrots are tender.

Add the coconut cream: stirring well.

Wilt the kale: by placing into the pot and stirring until it is soft and wilted.

Recipe Tips and Tricks

Use clean, bare hands: to roll the meatballs. The warmth of your hands will help bind the meatballs together by warming the fat in the ground sausage a bit.

If not using baby kale: be sure to chop the kale leaves and remove the center stems.

Be sure the soup temperature lowers from boiling: before adding the coconut cream. This will avoid the cream from curdling in the hot broth.

Recipe Variations

Spinach: is a perfect alternative for kale.

Ground pork: turkey or chicken are good substitutes for the sausage. You may wish to add extra spice to the soup as these are milder that Italian ground sausage.

Storage Tips

You can store this sausage meatball and potato soup in the fridge for 4 days when placed in an airtight glass container. It also freezes well for up to 6 months.

How do I ensure the sausage is Whole30?

Check ingredient labels carefully. Commercial sausages often contain added sugars, or preservatives like BHA/BHT. Look for brands with clean labels or make your own homemade sausage from ground pork, fennel, garlic powder, salt, and red pepper flakes.

When should I add the kale?

You should add the kale in the last 3-5 minutes of cooking, stirring constantly until wilted.

Can I use pre-made meatballs?

Yes, if the package lists zero added sugars, gluten, or dairy. Keep in mind they won’t be bite-sized.

Ingredients
  

  • 1 lb Ground Italian Sausage sugar free
  • 3 pieces Celery diced
  • 1/2 cup Onion diced
  • 4 whole Carrots sliced
  • 1.5 lb Baby Whole Potatoes cut in 1/4's
  • 8 oz Mushrooms sliced
  • 5 oz Baby Kale
  • 3 cloves Garlic minced
  • 2 tbsp Ghee I like Fourth & Heart
  • 13.5 oz Coconut Cream
  • 4 cups Chicken Broth plus an extra 2 cups if needed to cover veggies for boiling
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1/2 tsp Rosemary dried

Method
 

  1. Roll the sausage into bite-sized meatballs, set aside.
  2. Melt the ghee in a large soup pot.
  3. Add the diced onion and diced celery cooking till the onion is translucent.
  4. Add the minced garlic stirring constantly for one minute.
  5. Gently place the meatballs into the pot and don’t touch for 3 minutes. Flip them over and cook 5 minutes more.
  6. Add the potatoes, carrots, mushrooms, chicken broth and spice. If you need to add a little more broth to cover the veggies, do so now.
  7. Bring to a boil, lower heat and simmer 10 minutes or till the carrots are tender.
  8. Stir in the coconut cream till combined.
  9. Wilt the kale by placing into the pot and stirring until it is soft and wilted.
