Ingredients
  

  • 6 pieces Chicken thighs bone and skin on
  • 3 Tbsp Extra virgin olive oil
  • 4 cloves Garlic minced
  • 1 Tbsp Smoked paprika
  • 1 Tbsp Ground cumin
  • 2 tsp Chili powder
  • 2 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 whole Lime juiced

Method
 

  1. Place chicken in a large bowl or zip lock bag.
  2. Add all ingredients and massage well allowing the spice to get under the skin as well.
  3. Cover and refrigerate for at least 2 hours and up to overnight.
  4. Preheat oven to 400˚ and line a rimmed baking pan with parchment paper.
  5. Place chicken pieces skin side up on pan not touching.
  6. Roast for 50 or till skin is extra crispy and the chicken reaches 165˚ at the thickest part.
  7. Garnish with extra limes and cilantro if desired.
  8. Enjoy!
