Sheet Pan Shrimp Fajitas

Fajita's are such an easy meal to prepare! Whether you are having steak, chicken or these Sheet Pan Shrimp Fajita's they are sure to please! This flavorful dish is ready in 30 minutes and has minimal prep time! I love serving it in bowls with all the classic fajita toppings like fresh guacamole, sour cream, cilantro and limes. You can also serve it over it over cauliflower rice. The whole family will love this easy sheet pan dinner!




INGREDIENTS

1 lb shrimp, cleaned, tails off and patted dry, I like Rastelli's
3 bell peppers, seeds removed & sliced thinly
1 large onion, sliced in 1/4" wedges
1/4 cup avocado oil plus extra for drizzling on shrimp
1 tsp salt
1/2 tsp pepper
1/4 cup fajita spice recipe
2 limes
1/4 cup cilantro, chopped for garnish, if desired

DIRECTIONS

Preheat oven to 400˚

Line a rimmed pan with parchment paper

Spread peppers & onions evenly on pan

Drizzle with 1/4 cup oil

Sprinkle with salt & pepper

Squeeze juice from one lime over peppers & onions

Cook for 15 minutes

Meanwhile, toss shrimp in fajita spice and drizzle with oil, toss again

Remove pan from oven & add shrimp to pan

Cook 15 minutes longer, flipping shrimp halfway through

Garnish with lime wedges & cilantro
