This slaw is perfect along side grilled proteins and especially delicious on fish tacos! You have to try it. Ingredients You Will Need

Green cabbage: Green cabbage, also known as cannonball cabbage, is leafy, crunchy, cheap and nutritious. You can serve it raw or cooked in a number of ways.

Purple cabbage: Purple or red cabbage has a high concentration of antioxidants. You can also serve it raw or cooked. It is just so pretty and a favorite of mine for all sorts of salads.

Carrot sticks: Carrot sticks are whole carrots that have been peeled, washed and precut for you.

Pineapple: Pineapples are a tropical plant having a sweet edible fruit that adds a crucial sour yet sweet aspect to this slaw.

Red onion: Red onion adds a crunchy texture and bold flavor, elevating salads with its zesty kick.

Dried cranberries: They are made by partially dehydrating fresh cranberries. This gives them a chewy texture like raisins. They are the perfect additions to salads to add a delicious burst of sweet, tart and tang all at once.

Sunflower seeds: Sunflower seeds are a small, white seed with a tender texture and a mild nutty flavor. They come from the flower heads of the sunflower plant.

Avocado oil mayonnaise: It’s made with avocado oil, and offers a unique creamy texture and a healthier fat profile.

Apple cider vinegar: Apple cider vinegar, a type of vinegar made from fermented apple juice, adds a tangy acidity and fruity undertones to dishes like a summer slaw, enhancing its flavor with a refreshing kick.

Instructions

Prepare the ingredients: Shred the cabbage, dice the onion and peel, core and dice the pineapple, which is essential for the sweet and sour slaw.

If it seems watery or dry with dark spots or feels slimy or smells bad it would be best to discard it.

Ingredients
  

  • 3 cups Green Cabbage chopped fine
  • 3 cups Red Cabbage chopped fine
  • 1 cup Carrot Sticks chopped
  • 1 cup Pineapple diced
  • 1/2 cup Red Onion diced
  • 1/2 cup Cranberries, dried unsweetened
  • 1/2 cup Sunflower Seeds roasted & salted
  • Dressing
  • 1 cup Pineapple diced
  • 1/2 cup Avocado Oil Mayonnaise
  • 1/4 cup Apple Cider Vinegar
  • 1 Tbsp Dijon Mustard
  • 1 tsp Black Pepper
  • 1 tsp Salt only if sunflower seeds are unsalted

Method
 

  1. Combine all salad ingredients in a large bowl and toss well
  2. In a blender combine dressing ingredients till creamy
  3. Pour over slaw and toss well
  4. Enjoy!
