    Sweet and Sour Pineapple Slaw

    Is there anything better than deliciously, cold coleslaw in the summer? This Sweet & Sour Pineapple Slaw is full of crunch and flavor and screams summer! We actually eat it all year round. This slaw is perfect along side grilled proteins and especially delicious on fish tacos! You have to try it. I'm a huge slaw fan and have several recipes for you to try like this Purple Cabbage Coleslaw (with Apples & Cinnamon), Coleslaw with Avocado Lime Crema, Summer Slaw, or this Classic Coleslaw. All are Whole30 too!

    Such a fun twist on coleslaw: This Sweet and Sour Pineapple Slaw is not your average slaw! Having ingredients like sweet pineapple, tart cranberries and crunchy sunflower seeds with the most delicious creamy dressing.

    Makes a big bowl full: Have a party or backyard barbecue to go to? Bring this slaw and watch it disappear!

    It takes so little time: This coleslaw takes only 30 minutes to make. What could be better than that?

    Ingredients You Will Need

    Green cabbage: Green cabbage, also known as cannonball cabbage, is leafy, crunchy, cheap and nutritious. You can serve it raw or cooked in a number of ways.

    Purple cabbage: Purple or red cabbage has a high concentration of antioxidants. You can also serve it raw or cooked. It is just so pretty and a favorite of mine for all sorts of salads.

    Carrot sticks: Carrot sticks are whole carrots that have been peeled, washed and precut for you.

    Pineapple: Pineapples are a tropical plant having a sweet edible fruit.

    Red onion: Red onion adds a crunchy texture and bold flavor, elevating salads with its zesty kick.

    Dried cranberries: They are made by partially dehydrating fresh cranberries. This gives them a chewy texture like raisins. They are the perfect additions to salads to add a delicious burst of sweet, tart and tang all at once.

    Sunflower seeds: Sunflower seeds are a small, white seed with a tender texture and a mild nutty flavor. They come from the flower heads of the sunflower plant.

    Avocado oil mayonnaise: It's made with avocado oil, and offers a unique creamy texture and a healthier fat profile.

    Apple cider vinegar: Apple cider vinegar, a type of vinegar made from fermented apple juice, adds a tangy acidity and fruity undertones to dishes like a summer slaw, enhancing its flavor with a refreshing kick.

    Dijon mustard: Dijon is my preferred mustard for this recipe as it imparts a subtle tanginess and a vinegary note.

    Salt and Pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat, improving the overall flavor of a dish.

    Instructions

    Prepare the ingredients: Shred the cabbage, dice the onion and peel, core and dice the pineapple.

    Make the salad: Combine all salad ingredients in a large bowl and toss well.

    Make the dressing: In a blender combine dressing ingredients till creamy.

    Dress the coleslaw: Pour the dressing over the coleslaw and toss well.

    Recipe Tips and Tricks

    Buy bagged coleslaw: Want to save time, you can purchase prepackaged, shredded coleslaw making this pineapple slaw.

    Whole heads of cabbage: While bagged coleslaw saves time I love to shred my own as this leaves me with enough cabbage left over to use for other dishes.

    Recipe Variations

    Raisins: Raisins are a good swap for cranberries in this recipe.

    Almonds: You can use slivered almonds in place of the sunflower seeds in this coleslaw.

    Storage Tips

    Sweet and Sour Pineapple Slaw can be stored in the fridge for 4-5 days when placed in a sealed airtight glass container.

    FAQs About Sweet and Sour Pineapple Slaw

    Should I salt the cabbage before making coleslaw?

    Salting the cabbage, carrot and onion removes excess moisture that could turn the slaw soupy.

    How long can coleslaw sit out?

    You don't want to leave Coleslaw out for more than two hours. To keep it out longer especially on a warmer day, place it on top of an aluminum pan filled with ice.

    How to tell if bagged coleslaw is bad?

    If it seems watery or dry with dark spots or feels slimy or smells bad it would be best to discard it.

    Ingredients
      

    • 3 cups Green Cabbage chopped fine
    • 3 cups Red Cabbage chopped fine
    • 1 cup Carrot Sticks chopped
    • 1 cup Pineapple diced
    • ½ cup Red Onion diced
    • ½ cup Cranberries, dried unsweetened
    • ½ cup Sunflower Seeds roasted & salted
    • Dressing
    • 1 cup Pineapple diced
    • ½ cup Avocado Oil Mayonnaise
    • ¼ cup Apple Cider Vinegar
    • 1 tablespoon Dijon Mustard
    • 1 teaspoon Black Pepper
    • 1 teaspoon Salt only if sunflower seeds are unsalted

    • Combine all salad ingredients in a large bowl and toss well
    • In a blender combine dressing ingredients till creamy
    • Pour over slaw and toss well
